Ingredients
- Dressing:
- 1-2 heads leaf, bibb or Boston lettuce
- 1 1/2 lb. lean cold rare roast beef, very thinly sliced
- 6 c. seasonal vegetables (e.g., blanched whole green beans, julienned carrots, broccoli florets, asparagus spears, cherry tomatoes, whole button mushrooms, sweet onion sliced into rings)
- 1 c. French dressing
- 2 tbl. finely chopped green pepper
- 2 tbl. sweet pickle relish
- 2 tsp. chives
- 1 tsp. paprika

Preparation
Step 1
Line a large platter with the lettuce, arrange beef in the center. Surround the beef with the vegetables arranged attractively by color, shape, etc.
Drizzle dressing over the beef and vegetables. Cover and chill. Garnish as desired.
This makes an elegant serve-yourself dinner salad or appetizer.
