Ingredients

  • 2 tbl. olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1/4 c. chopped fresh parsley
  • 1 1/2 tsp. salt
  • 1/4 tsp. saffron or curry powder
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 4 c. water or vegetable broth
  • 1 tsp. lemon juice
  • 1 lb. fish fillets, cut into 2 inch pieces
  • 1 12 oz. package frozen uncooked shrimp
  • 1 6 oz. package (3/4 c.) frozen uncooked crab or lobster meat
  • 1 pint fresh oysters or clams, undrained
  • 1 8 oz. can tomatoes
  • julienned carrots
  • chopped leek
  • fresh green beans
  • pinch cayenne pepper

Preparation

Step 1

Heal oil in Dutch oven over medium high heat. Cook and stir onion, garlic and leek in oil for 2-3 minutes. Add remaining ingredients; mix well. Bring to a boil. Reduce heat to low; cover and simmer 20-30 minutes or until shrimp turn pink, stirring occasionally. Remove bay leaf.

Any combination of fish or seafood, fresh or frozen, can be used. Vegetables can be varied also.
