Ingredients
- 1 cup and 2 tbs. cold butter, cut into pieces
- 3 cups flour
- ¾ cup icing sugar
- ½ tsp. salt
- 3 yolks
- 3 tbs. ice water
- 1 tsp. vanilla

Step 1
Combine flour, sugar, and salt; cut in butter and work until the mix resembles coarse meals.
Whisk together the yolks, ice water, and vanilla until combined. Add the liquid ingredients to the flour mix. Form the dough into a ball and divide into 2 pieces and chill 1 hour.
Preheat the oven to 400 degrees; form dough into 24 1 inch balls, keeping the 2nd disk chilled. Press the balls into 1/8 cup mini-muffin cups. Chill 15 minutes or until firm. Bake tartlets for 12 minutes or until golden, remove from oven and shape remaining dough.
