Ingredients
- 4 pound roast beef
- 6 cloves garlic
- 1 can ripe olives
- 1/4 cup vinegar
- 1 1/2 tablespoon salt
- 1/2 teaspoon black pepper
- 1 cup wine (sherry or port)

Preparation
Step 1
Make slits in beef and press garlic, pepper and cloves in holes.
Mix together vinegar, wine and salt and add to roast. Cook at medium heat.
Baste every 10 minutes until done.
Cook for about 2 hours.
