Gorgonzola sauce
Topping for beef tenderloin steak. Not for the faint of heart, use sparingly for this is very rich!

Ingredients
- 4 cups heavy cream
- 3-4 ounces crumbly gorgonzola
- 3 Tbsp freshly grated parmesan cheese
- 34 tsp Kosher salt
- 3/4 tsp freshly ground pepper

Step 1
Bring the cream to a full boil in medium saucepan over medium high heat, then continue to boil rapidly over medium to medium hight heat until thickened like a white sauce, stirring occasionally.
(20-30 min)
Off the heat add the Gorgonzola, Parmesan, salt and pepper. Whisk rapidly until the cheeses melt and serve warm. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.
