Ingredients

  • ½ cup raisins
  • 1/3 cup water
  • ½ cup shortening
  • 1 egg
  • 1 ½ cups dark brown sugar
  • 1 ½ tsp. vanilla
  • 2 cups flour
  • 1 ¼ cup oats, not instant
  • 2 tsp. baking soda
  • ¾ tsp. cinnamon
  • 1 tsp. salt
  • ½ cup raisins

Step 1

Preheat oven to 275 degrees.

Combine raisins with water in a food processor, and blend on high speed for about 1 minute until very smooth. Combine the raisin purée with shortening, egg, brown sugar, and vanilla in a large bowl. Mix well with an electric mixer until smooth. In a separate bowl, combine the flour with the oats, baking soda, cinnamon and salt. Pour this dry mixture into the wet ingredients and mix well until incorporated. Mix in raisins. Roll tablespoon portions of the dough into a ball and press into ½ inch flat cookie on a baking sheet. Bake for 18-20 minutes, be careful not to overcook.
