- 4 chicken breasts
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 large zucchini, cut into cubes
- 2 small cans garlic tomatoes

Step 1
Brown the chicken in the olive oil in a large skillet. Remove the chicken. Add the onion and zucchini to the skillet. Cook for 5 minutes. Pour the garlic tomatoes into the skillet. Returen the chicken to the skillet. Simmer for 20 minutes. Serve over hot cooked rice.
