Chocolate Ice Cream
Described by my husband as "too good" and warned me to only make it in small amounts as he would not be held responsible for how much he ate!
- 3/4 cup sugar
- 250 ml milk
- Pinch of salt
- 2 T cocoa
- 3 egg yolks
- 60g chocolate, chopped
- 500ml cream
- 1 t vanilla

Beat eggs with salt until pale, thick and ribbons form.
Heat milk, sugar, salt and cocoa in saucepan until it just begins to boil.
Pour hot milk over beaten eggs gradually; mix well.
Pour milk mixture back into saucepan.
Heat. Stir constantly until mixture begins to stick to the back of your spoon and becomes thick. Don't let it boil!
Remove from the heat, add the chocolate and stir until it has all melted in and is smooth.
Chill for at least 2 hours (best overnight).
Stir in cream & vanilla.
Pour into your ice cream maker and churn according to manufacturer's instructions.
Mix about 25-30 minutes or according to manufacturer's instructions.
