Ingredients

  • 4 boneless, skinless chicken breasts, 4 oz. each
  • or substitute veal scallopine, 4 oz. each
  • 1/2 cup whole wheat flour
  • 1/2 tsp. each salt and pepper
  • 2 Omega-3 egg whites
  • 1/2 cup wheat bran
  • 1/4 cup wheat germ
  • 1/4 cup fine dry whole wheat breadcrumbs
  • 1/2 cup low-fat, low-sodium chicken stock
  • 1/2 cup thinly sliced dried apricots
  • 1/4 cup chopped green onion
  • 1 tsp. orange zest
  • 1tbsp. olive oil
  • 1/2 cup fresh orange juice

Step 1

Using mallet, pound chicken between 2 pieces of plastic wrap until about 1/4" thick. In shallow plate, combine flour, salt and pepper. In another, whisk egg whites. In a 3rd, combine bran, germ, breadcrumbs and zest. pat chicken dry and dredge in flour, shaking off excess. Dip in eggs, letting excess drip off, then dredge in bran mixture, coating completely. In large non-stick pan, heat oil over med-high heat. Fry chicken for 4 mins. per side or until golden brown. Transfer to platter and place in 200 F oven. In pan, combine OJ, stock and apricots. Bring to boil and reduce until thick, 3 mins. Add onion. Pour over schnitzel and serve.
