Ground Beef Stew over Garlic Mashed Potatoes

Ingredients
- 1 In 10-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
- 2 Add all remaining Stew ingredients; mix well. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes, stirring occasionally, until vegetables are tender.
- 3 Meanwhile, in medium saucepan, heat water, margarine and garlic salt to boiling. Remove from heat; add milk. Stir in potato flakes and parsley. Cover to keep warm.
- 4 To serve, fluff potatoes with fork. Serve stew over potatoes.

We absolutely love this recipe, quick but hearty and filling. If I am in a real hurry I use the directions and adjust them for my favorite instant mashed potatoes, which really makes them much more tasty, but if I have the time I make my own mashed potatoes and it is very good either way. This coming from someone that wouldn't even try instant potatoes a few years back. Really great on those chilly days, the meal just warms your through.
