Ingredients
- One 4 pound pork roast, loin or center cut
- 2 cloves garlic, minced
- Salt and petter to taste
- 4 bay leaves
- 1/2 cup white vinegar
- 1/2 teaspoon dried thyme

Preparation
Step 1
1. Preheat oven to 325 degrees.
2. Pierce the roast in several places with a two-pronged fork.
3. Force some minced garlic into each hole, again with the aid of the fork.
4. Sprinkle liberally with salt and pepper.
5. Place the bay leaves in the bottom of the roasting pan.
6. Place the roast on top fat side up.
7. Combine vinegar and thyme and pur evenly over the roast.
8. Place in oven, allowing 35 minutes baking time per pound. Baste occasionally.
