- 1 c. Hungry Jack Mashed Potato flakes
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. poultry seasoning
- 1 egg, slightly beaten
- 1 tsp. lemon juice
- chicken pieces, skin removed

Step 1
Heat oven to 375 degrees.
In plastic bag, combine potato flakes, salt, pepper and poultry seasoning. In shallow bowl, combine egg and lemon juice.
Dip chicken pieces into egg mixture; shake in potato flake mixture to coat. Place chicken in ungreased baking pan.
Bake uncovered for 45 to 60 minutes or until chicken is fork tender and juices run clear.
