Ingredients
- Chicken Filling:
- 2 cans Tyson white meat chicken
- 1 Tbl Cumin
- 1 Tbl Garlic Salt
- 1 Tbl Cayenne
- 1 Tbl Chili Powder
- 1 can chicken broth
- Flour Tortillas
- Sauce:
- 1/2 stick of butter
- 1/4 cup flour
- 2 cups chicken broth
- 1 pkg Monterrey jack cheese
- 16 oz sour cream

Step 1
To make chicken filling: Mix all ingredients together in a large bowl, drain excess broth. Scoop approximately 2 spoons of filling into a flour tortilla, roll up like an enchilada and then place in a casserole dish. Repeat until finishes.
To make sauce: Melt butter in pot, add flour. Add remaining ingredients and stir until cheese is melted and sauce is thick. Pour sauce over enchiladas and bake at 425F for 20 minutes. It's also great to add other toppings like green chile peppers or more cheese!
