Ingredients

  • 144 grams blanched whole almonds, toasted and coarsely chopped
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 280 grams flour
  • 150 grams sugar
  • 3 eggs
  • 1 tsp. vanilla
  • ½ tsp. almond extract

Step 1

Preheat the oven to 300 degrees. Beat the eggs and extract together. Combine the flour, sugar, baking powder, and salt. Mix well. Add the eggs and beat until the dough forms, adding the almonds half way through. Divide dough in half and roll each half into a 10 inch log about 2 inches wide. Bake logs 35 – 40 minutes and cool 10 minutes.

Cut logs into 1 ½ inch slices and bake again for 10 – 12 minutes
