Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1 cup shredded Cheddar cheese
  • 1 (12 ounce) can whole kernel corn with sweet red peppers, drained
  • 1 (8 1/2 ounce) can golden cream style corn
  • 3 eggs, beaten
  • 1 tbsp prepared mustard
  • 1 cup soft bread crumbs
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/8 tsp red pepper
  • 1/2 cup cracker crumbs
  • 1 tbsp melted butter

Preparation

Step 1

In saucepan melt butter, add flour and stir until smooth. Gradually add milk and cheese. Stir over medium heat until sauce thickens. Add all remaining ingredients except cracker crumbs and melted butter, which are combined to make the topping. Spoon into greased 2-quart casserole and bake for 1 hour or until center is firm.
