Ingredients

  • Toppings:
  • 1 1/2 to 2 pounds of lean ground beef
  • 2 garlic cloves, minced
  • 1 medium onion, chopped
  • 46 oz. tomato juice (or you can use one 6 oz. can tomato paste as base and add water to make up difference)
  • 1 tsp. salt
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 1 tsp. cayenne (or less if desired)
  • 1 tsp. black pepper
  • 1 tsp. cumin
  • 1 1/2 tsp. vinegar
  • 2 Tbsp. chili powder
  • 2 dashes of Worcestershire sauce
  • 5 bay leaves
  • 1 pound of spaghetti, cooked just before ready to serve
  • 4-6 cups of cheddar cheese
  • 1 onion, chopped
  • 1 can kidney beans, drained and rinsed
  • oyster crackers if desired or crushed saltines works just as well in a pinch

Preparation

Step 1

Brown ground beef with onion and garlic. Drain. Transfer beef to a large Dutch oven or soup pot. Add tomato juice and all teh rest of the ingredients, except teh spaghetti. bring mixture to a boil. Reduce heat and simmer, uncovered for 2 hours. Remove bay leavs before serving. To serve: place cooked spaghetti on plates.

For Chili:
2 way: add chili sauce on top of noodles
3 way: add shredded cheese on top of chili sauce
4 way: add raw onions on top of sauce, then top with shredded cheese.
5-way: add onions, beans, and shredded cheese on top of sauce. I also liek to add oyster ccracker to the top, like they do at Gold star which is the inspiration of the dish.
