Ingredients
- 1 can (16 oz.) low-fat or fat-free retried beans
- 2 cups Lucerne® Shredded Reduced Fat
- Mexican Cheese Blend, divided
- 1/4 cup desired flavor Safeway SELECT®Salsa
- 2 medium tomaioes, chopped
- 1 can (1.25 oz.) sliced black olives, drained
- 1 avocado, peeled and chopped
- 1/4 cup Lucerne Light Sour Cream
- 1/4 cup green onion with tops, sliced
- Tortilla chips for serving

Step 1
In a medium saucepan over moderate heat, stir beans,
1 cup cheese and salsa until hot and cheese melts.
Spread into bottom of 9-inch pie dish or rimmed serving
plate. Sprinkle with tomatoes. Top with cheese, leaving
a 1 -inch border of tomatoes showing. Top with a ring of
black olives and avocado. Spoon sour cream into center.
Sprinkle green onions over all. Serve with tortilla chips.
MAKES 8 SERVINGS.
