Fluffy Chicken and Rice
- 1 can cream of mushroom soup
- 2 soup cans milk
- 3/4 cup long grain rice, uncooked
- 4oz can mushroom stems and pieces, with liquid
- 1 envelope onion soup mix
- 4 chicken breasts
- 1 tbsp poultry seasoning
Preheat oven to 350 degrees. Prepare a baking dish with cooking spray.
Mix soup and milk. Reserve 1/2 cup. Mix remaining soup mixture with rice, mushrooms and half the onion soup mix. Pour the mixture into the baking dish.
Season chicken breasts on both sides with poultry seasoning, salt and pepper. Place the chicken breasts on top of the rice mixture. Pour reserved soup mixture on top and sprinkle with the remaining onion soup mix.
Cover the baking dish with foil and bake for 1 hour. Remove the foil and bake for 15 minutes longer.
