Ingredients

  • 3/4 c. Shawnee Best Yellow Corn Meal Mix
  • 1/4 c. flour
  • 2 T. sugar
  • 1/2 c, milk
  • 1 egg
  • 3 T. oil
  • Variations: Add 1 cup grated cheese or 1/3 c. finely chopped onion to muffin batter

Preparation

Step 1

Preheat oven to 400 degrees.

Stir together corn meal mix, flour & sugar.

In a seperate bowl blend milk egg & oil.

Add liquid ingredients to the dry mix & stir till just moistened.

Spoon batter into greased or paper (foil) lined muffin pan, filling 2/3 full.

Bake 18 - 22 minutes. Yield 6 large muffins.
