Ingredients
- 3 cups quartered or sliced mushrooms (8 oz)
- 2 medium carrots, sliced (1 cup)
- 2 medium leeks, sliced (2/3 cup)
- 1/2 cup brown or white rice
- 1/2 cup wild rice, rinsed and drained
- 12 oz skinless, boneless chicken breasts, cut into 3/4 inch pieces
- 1 tsp dried thyme, crushed
- 1/2 tsp dried rosemary, crushed
- 1/4 tsp tsp coarse ground pepper
- 3 14 oz can reduced-sodium chicken broth (5 1/4 cups)
- 1 10 1/2 oz can condensed cream of mushroom soup

Step 1
In a 3 1/2-6 qt slow cooker place mushrooms, carrots, leeks, and rices. Place chicken on vegetables and rices. Top with thyme, rosemary, and pepper. Pour broth over all.
Cover and cook on low heat setting for 7-8 hours or on high heat setting for 3 1/2-4 hours. Stir in cream of mushroom soup at end of cooking.
