Ingredients

  • 2 cups dried navy beans
  • 4 cups water
  • 1 medium onion, chopped
  • 2 tbsp butter
  • 1/2 cup molasses
  • 1/2 cup maple syrup
  • 2 tsp salt
  • 1 tsp dry mustard
  • 1/2 tsp ground cinnamon
  • 1 tsp ground ginger

Step 1

Cover beans with water and allow to soak overnight.

Drain beans and combine with 4 cups water in a 2-quart saucepan. Bring to boil over high heat. Cover beans, reduce heat, and simmer 2 hours. Drain beans, reserving 2 cups liquid (add additional water to equal 2 cups if necessary).

In a small skillet, saute onion in butter until onion is limp. Preheat oven to 350 F. In a lightly greased 2-quart baking dish, combine beans, sauteed onion, reserved liquid, molasses, syrup, salt, mustard, cinnamon and ginger. Mix well. Cover and bake 2 hours, stirring occasionally. Add more water to pan if necessary. Uncover and bake 35 to 45 minutes or until top is browned.
