Ingredients

  • 1 T. plus 1 tsp. canola oil
  • 1 T. finely chopped onion
  • 1 garlic clove, finely chopped
  • 2 C. thawed frozen artichoke hearts (10oz)
  • 2 tsp. chopped freah mint
  • 2 tsp chopped parsley
  • salt and pepper to taste
  • 1/4 c. dry white wine
  • 2 T. flour
  • 1 C. chicken broth
  • 1 package penne pasta, cooked and drained
  • 2 T. parmesan cheese

Preparation

Step 1

1) preheat oven to 425. spray 8" square baking pan with pam

2) in large, non-stick skillet, heat oil: add onion and garlic. saute, stirring until onion is translucent, about 3 minutes. add artichoke hearts, parsley, mint salt and pepper. increase heat to md,saute, stirring constantly for 3 minutes

3) add wine; increase heat to high and cook until wine evaporates. lower heat to md,sprinkle in flour. saute; stirring 1 minute. gradually stir in broth; cook stirring until thickened and creamy. remove from heat.

4) add pasta and 1T. of parmesan cheese to
artichoke mixture; toss gently to combine. transfer to prepared pan; sprinkle with remaining Parmesan. bake 10-12 minutes; place under broiler to brown top lightly, about 1-2 minutes
