Deck's Apple-Cinnamon Crepes

Ingredients
- 2 eggs 2
- 1/2 cup all-purpose flour 125 ml
- 3/4 cup milk 175 ml
- 1 tbsp sugar 15 ml
- pinch salt
- 1/2 tsp vanilla 2 ml
- 1 tbsp butter 15 ml
- Filling
- 1 large apple, peeled, halved, cored and sliced as thinly as possible
- 1/4 cup sugar 50 ml
- 1/2 tsp cinnamon 2 ml
- 4 small scoops vanilla ice cream

Step 1
1 For crepes, combine eggs, flour, milk, sugar, salt, vanilla and melted butter in a blender or food processor and blend until smooth. Transfer to a bowl, cover and let rest one hour or up to overnight in the refrigerator.
2 Brush a 9in non-stick skillet with butter and add 1/2 cup/125mL batter. Arrange half of the apple slices in a single layer over the batter. Combine sugar and cinnamon in a small bowl and sprinkle apples with 2 tbsp/30mL of the mixture. Lower heat and cook 5 to 8 minutes until bottom of crepe is browned and apples are tender.
3 Gently loosen crepe from pan and slide onto a large plate. Top with 2 scoops of ice cream and fold in half. Repeat. Serve each person half a crepe. There will be remaining batter that can be refrigerated and reused for up to 2 days.
