  • 55 grams sugar
  • 50 grams cold butter, chopped
  • 2 egg yolks
  • 2 tsp. ice water

Step 1

Sift flour and make a well in the centre, place the sugar, butter, and egg yolks in the well. Gradually draw in the flour, working together until all the flour is incorporated, adding enough water to make the ingredients cling together.

Press the ingredients together to form a ball, nead gently until smooth, cover and chill 30 minutes. Roll dough, line tart pan, and chill and additional 30 minutes.
