Ingredients
- 3lbs russet potatoes, peeled & cut into 1" chunks
- Salt & ground black pepper to taste
- 1/3c light or reg sour cream
- 1/3c gluten free mayonnaise
- 1/4c mixed chopped herbs, i.e: parsley, basil & thyme
- 2T lemon juice
- 2 ribs celery, chopped
- 1/2 small onion, chopped

Preparation
Step 1
1. Put potatoes into a pot, cover w/1" salted H2O & bring to a boil. Reduce heat & simmer 8-10 min.
2. Be careful not to overcook. Test for doneness by inserting a fork into a potato chunk. It should slide in easily w/o breaking apart the potato. Immediately drain well & let cool 10 min.
3. Gently toss potatoes w/sour cream, mayo, herbs, lemon juice, celery, onion, salt & pepper.
4. Cover & chill before serving.
