General Tao Chicken

Ingredients
- 4 chicken breasts
- 1 tsp salt
- 1 med green onion
- 1 med onion
- 1 1/2 cup thin batter
- 3/4 cup vinegar
- 1/2 cup water
- 2 tbsp ketchup
- 1/2 cu cornstarch and water mix
- 1 tsp sesame oil
- 1 tsp pepper
- 1 med red pepper
- 1/4 lb rice stick
- 1 cup flour
- 1/2 cup sugar
- 2 tbsp hoisin sauce
- 4 tbsp chili sauce

Step 1
Cut chicken breasts into 1/4 inch thick slices. Marinate with salt & pepper and sesame oil,1 tsp sugar for 15 minutes. Coat with dry flour and place in the thin batter. Deep fry at 375* until golden. Remove and dry excess oil with paper towel; stir into the prepared sauce (see recipe below). Serve on a bed of deep fried rice stick.
Cut onion, red and green peppers the same size as the chicken; blanch vegetables. Pour water, vinegar, sugar, ketchup, hoisin sauce and chili sauce into the wok and bring to a boil. Thicken with cornstarch mixture.It is very important that the sauce be on the light side because of the amount of sugar and the batter coating on the chicken. Turn off heat and stir the prepared chicken and vegetables.
