Ingredients
- 1 chicken, cut up
- 3/4 head garlic, pounded to a pulp (about 2 tablespoons)
- 1/4 cup soy sauce
- 1 cup white vinegar (Dati Puti brand is best)
- 1 teaspon peppercorns
- 1 bay leaf
- Salt
- Pepper

Preparation
Step 1
Combine all ingredients. Mix well. Use your hands.
Let stand for at least a few hours. Overnight works well.
Cook covered for 45 minutes. Start on medium to high heat until mixture comes to a boil. Then bring down to a simmer.
If you want wet adobo, this is ready to eat.
For fried adobo, separate chicken pieces from sauce and fry in very hot oil.
Reduce sauce by simmering until it thickens a little.
