  • 4 egg whites
  • Pinch salt
  • 1 cup sugar
  • 1 tsp. cornstarch
  • 1 tsp. white vinegar
  • 1 tsp. vanilla
  • 1 cup whipping cream

Step 1

Beat egg whites with salt until soft peaks form. Gradually add sugar, beating constantly until mixture holds stiff peaks. Add cornstarch, vinegar, and vanilla and beat until peaks are stiff and shiny.

On a baking sheet lined with brown paper spread meringue into a 10 inch circle using a spatula. Build up the edge to a height of 2 inches.

Bake on bottom rack of a 275 degree oven for 1 ½ hours, and leave meringue inside 1 – 2 hours, or until dry and cool.

In a bowl, beat cream until stiff peaks form, spoon the cream into the center of the meringue and garnish with sliced kiwifruit or strawberries. Slice into wedges to serve.
