- 8 bone-in chicken thighs
- Salt/pepper
- 12oz jar apricot jam
- 2 tbsp honey
- 2 tbsp Dijon mustard

Preparation
Step 1
Preheat oven to 425 degrees. Prepare a baking dish with cooking spray.
Rinse chicken thighs, pat dry and transfer to baking dish. Season chicken with salt and pepper on both sides.
In a small sauce pan, bring jam, honey and mustard to a boil. Reduce heat to medium-low and simmer until thickened and reduced by half, about 15 minutes. Spoon apricot mixture over chicken thighs, spreading to coat evenly.
Bake chicken basting with the apricot sauce from the bottom of the baking dish every 10 minutes. Bake for about 30 minutes or until the chicken juices run clear.
