Ingredients

  • 1/4 cup plus 1 tbs oil, divided
  • 1 c plus 1 tbs cornmeal, divided
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 2 eggs beaten
  • 8 3/4 oz can corn, drained
  • 2 jalapeno peppers, seeded and finely chopped
  • 1/2 onion, finely chopped.
  • 8 oz pkg shredded cheddar cheese

Preparation

Step 1

In cast iron skillet over medium hihg heat, heat 1 tbs oil. When skillet is hot, sprinkle with one tbs cornmeal.
Mix remaining ingredients; our into hot skillet. Place skillet in oven. Bake at 350 for 45 minutes or until set and golde. Cut into wedges.
