Ingredients
- 1 pound boneless skinless chicken breast, cut into thin strips
- 1/2 cup red onion, thinly sliced
- 1/2 cup apple, thinly sliced
- 2 tablespoons pine nuts
- 1 tablespoon raisins
- 2 avocados, sliced
- 8 cups mixed salad greens
- 1 tablespoon Dijon mustard
- 3 tablespoons olive oil, divided
- 1 tablespoon white wine vinegar
- 1/2 teaspoon sugar
- 1 teaspoon dill weed

Preparation
Step 1
Heat 1 tablespoon olive oil in a skillet. Sauté chicken strips for 1-2 minutes until no longer pink.
Toss red onion, apple, pine nuts and raisins. Mix well. Add chicken and avocado.
In a small bowl, mix mustard, olive oil, vinegar, sugar and dill weed. Toss with greens. Plate greens and top with avocado chicken mixture
