Ingredients
- 3 cups sweet potatoes (5-6 medium)
- 1/2 cup sugar
- 1/2 stick butter
- 1/2 cup milk
- 1 tsp. vanilla
- 2 eggs, beaten

Preparation
Step 1
Bake sweet potatoes and peel. Mix well with mixer.
Topping:
½ cup brown sugar
1 cup chopped nuts
½ stick butter
1/3 cup flour
Mix above ingredients together and sprinkle over potato mixture. Bake at 350 degrees for 30 minutes. Alternate topping: after baking soufflé, put marshmallows on top and put under broiler. Watch until lightly brown.
