Fruit Cocktail Cake

This was a recipe of my friend, Chris Kemp. I went to school with her husband Harvey at Claremont.

Ingredients
- 1 Cup flour
- 1 Cup sugar
- 1 tsp soda
- 1 egg beaten
- 2 tsp melted butter
- pinch salt
- 1 small can fruit cocktail UNdrained (#3 size)
- For topping
- Brown sugar
- Chopped nuts

Preparation
Step 1
Mix flour, sugar, fruit cocktail, egg, soda, butter and salt together.
Pour in greased, floured 7 x 11 x 1 inch pan (or similar size)
Before baking, sprinkle 1/4 cup brown sugar and 3/4 cup chopped nuts (pecans or walnuts) over top.
Bake for one hour. Is delicious alone or served with whipping cream or ice cream.
Note: Cake will have better texture if left in oven until cool (turn oven off, of course).
