Ingredients
- CREAM SAUCE:
- 4 Cloves Garlic
- 1 medium Onion Chopped
- 2 Tbs Butter
- 2 Tbs Olive Oil
- 1/2 Lb Ground Chuck
- 1/2 lb Italian Sausage
- 1 (10 oz) package frozen Spinach (chopped, thawed and drained)
- 5 Tbs Parmesan Cheese
- 1/2 tsp Oregano
- 2 TbsHeavy Cream
- salt and Pepper to taste
- 2 Eggs (beaten)
- 1 package Manicotti Noodles (cooked and drained)
- 4 Tbs Butter
- 4 Tbs Flour
- 1 Cup Milk
- 1 Cup Heavy Cream
- 1 tsp Salt
- Dash White Pepper
- TOMATO SAUCE:
- 1 Onion Chopped
- 2 Tbs Olive Oil
- 2 One Lb cans Italian Tomatoes
- 3 Tbs Tomato Paste
- 1 tsp sugar
- 1 tsp Basil
- B;lack Pepper to taste

Step 1
Saute garlic and onions in oil and butter. Add ground chuck and sausage and brown. Add spinach, cook till moisture is nearly gone. Add seasonings. Cool. Add eggs that have been beated in cream. Stuff mixture into cooked noodles.
Cream Sauce: Melt 4 Tbs Butter, stir in 4 Tbs Flour. Cook 2 minutes stirring; add 1 cup of milk and 1 cup heavy cream, 1 tsp salt and dash of white pepper. Cook and stir until thick.
Tomato Sauce: Saute onion in olive oil. Ad remaining ingredients and simmer 30 minutes.
Pour small amount of tomato sauce in large rectanglar casserole. Spread over bottom of pan evenly. Put on layer of stuffed manicotti. Cover with cream sauce. Sprinkle with parmesan cheese (or may use mozzarella cheese about 2 cups shredded in place of parmesan). Pour remaining tomato sauce and dot with butter. Bake at 350 degrees for 20 to 30 minutes or until bubbly. Serves 8.
