Ingredients

  • 2 cups water
  • 1 tsp. kosher salt
  • 1 cup butter
  • 2 cups flour
  • 8 eggs
  • 3 tbs. vanilla
  • Canola oil

Preparation

Step 1

Place the water, salt, and butter in a pan and bring to a boil. Remove the mixture from heat and dump in the flour, all at once, whisking it all in. Retun mixture ot the burner, and stir iwth a wooden spoon. Cook until the dough starts to pull easily from the sides of the pan, and mixture forms a ball, about 3 minutes. Remove the mixture from heat and stir until tepid, about 6-8 minutes. Add eggs, one at a time, stirring each one completely before adding the next. Stir in vanilla and cool.

Line a cookie sheet with parchment paper and grease with oil and chill.

Heat oil to 375 degrees over medium heat, slide the circle into the hot oil and cook until golden, about 3-4 minutes and drain on paper towels.
