Ingredients
- 2 cups flour
- ¾ cup sugar
- 2 tsp. baking powder
- ½ tsp. cinnamon
- ¼ tsp. salt
- 1 ½ cups whole unblanched almonds
- 3 eggs
- 2 tsp. vanilla

Step 1
Preheat the oven to 350 degrees. Combine the flour, sugar, baking powder, cinnamon, and salt in a bowl. Stir in almonds.
Whisk eggs and vanilla together, stir into the flour mix. Dough will come together as it is being kneaded about 1 – 2 minutes. Divide dough in half; shaping each into a 12 inch long log. Flatten each log until it is 2 inches wide and 1 inch high. Bake for 30 minutes. Cool completely and then with a sharp serrated knife, cut cooled logs and bake an additional 10 – 15 minutes.
