  • 2 cups all-bran cereal
  • 1 1/2 cups shredded carrots
  • 1 cup milk
  • 3/4 cup drained canned crushed pineapple
  • 1/2 cup plain yogurt (not fat-free)
  • 1 1/2 cups whole wheat flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. each baking soda, salt
  • 1 egg
  • 1/2 cup liquid honey

Step 1

Preheat oven to 375 F. Line a 13 X 9 metal baking pan with foil, leaving a 2" overhang at each end. Lightly butter or spray foil. Combine cereal, carrots, milk, pineapple and yogurt. Let stand 5 mins. in a large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk egg and honey into milk mixture. Pour over dry ingredients and stir just until moistened. Spread into pan, smoothing top. Bake 30 mins. Let cool completely in pan on rack. Using foil overhang as handles, remove and cut into bars. Wrap individually in plastic and freeze in air tight container for up to 2 months.
