  • 400 grams sugar
  • 400 grams whole eggs
  • 200 grams sugar
  • 1000 grams homo milk
  • Vanilla, to taste

Step 1

Place sugar in a pot on high heat. Add just enough white sugar to cover the bottom of the pot and let melt, and then add some more sugar. Continue until all the sugar is melted and turns golden brown. Remove from heat and pour a small amount of caramel into each ramekin. Let the sugar cool.

Mix together the eggs and 200 grams sugar until blended. Heat milk to just before boiling, temper the eggs and add the milk and vanilla to the eggs. Pass the custard through a sieve, and pour evenly into ramekins. Bake the ramekins in a hot water bath for approximately 40 minutes, until the custard is set.
