Cream of Broccoli Soup

Ingredients
- 1 1/2 pounds broccoli
- 2 cups chicken broth
- 1 large stalk celery, chopped (about 3/4 cup)
- 1 meduim onion, chopped (1/2 cup)
- 2 tablespoons butter
- 2 tablespoons flour
- 3/4 teaspoon salt
- pepper to taste, dash of ground nutmeg
- 1/2 cup whipping cream

Preparation
Step 1
Clean and remove flowerets from broccoli, cut tender stalks into small pieces.
Heat chicken broth to boiling and add broccoli, celery, and onion. Cover and heat to boiling. Boil until tender, about 10 minutes; do not drain.
Heat butter in 3 quart saucepan over low heat until melted. Stir in flour. Cook, stirring constantly, until mixture is smooth and bubbly; remove from heat.
Stir in chicken broth from veg mix, stirring constantly.
Boil and stir one minute. Stir in vegs and seasonings.
Heat just to boiling. Add more liquid as necessarly up to 2 cups water. When of right consistency, add whipping cream and heat until till hot-do not boil.
Add shredded cheese, if desired.
