GREENS WITH GRILLED LEMON CHIVE DRESSING

Ingredients
- 1 lemon
- 1 tsp plus 3/4 cup olive oil
- White wine vinegar
- 2 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp each dried thyme and salt
- 1/4 tsp pepper
- 1/4 cup finely chopped chives
- Fresh greens (approximately 8 handfuls)

Preparation
Step 1
Grate 1/2 tsp rind from lemon and reserve, Halve lemon. In small skillet, heat 1 tsp oil over medium heat. Cook lemon halves, cut sides down, 3-4 minutes or until edges are golden. Juice lemon halves (there should be about 1/4 cup juice).
Add enough vinegar to lemon juice to make 1/3 cup liquid. Place in blender or food processor, along with rind, mustard, garlic, thyme, salt and pepper. Blend until smooth.
With motor running, slowly add 3/4 cup oil to container, blending until dressing is smooth and all of oil is incorporated. Stir in chives.
Serve immediately over fresh greens (recipe shown with spinach) or store in refrigerator. Makes about 1 1/4 cups.
