Ingredients
- 1/2 lb. stewing beef,
- 1/4 cup whole wheat flour,
- 6 small onions; sliced,
- 3 cups broccoli,
- 2 medium carrots;
- peeled and cut into chunks,
- 3 cloves minced garlic,
- 1 cup diced parsnip,
- 3 cups water,
- 1-1/4 cups low sodium beef broth,
- 1 large can tomatoes,
- 1 tsp. dried thyme
- , 1 tsp. dried oregano,
- Salt and pepper to taste,
- 1 bay leaf.

Step 1
* Remove all visible fat from beef; cut beef into 1 inch cubes. In large casserole or Dutch oven, toss beef with flour. Add broccoli onions, carrots, garlic, parsnip, water, beef broth, tomatoes, thyme, oregano, salt, pepper and bay leaf; stir to mix. Bake, covered, in 325 F oven for 2 1/2 to 3 hours, stirring occasionally. Remove bay leaf before serving.
