Ingredients

  • 1/2 lb. stewing beef,
  • 1/4 cup whole wheat flour,
  • 6 small onions; sliced,
  • 3 cups broccoli,
  • 2 medium carrots;
  • peeled and cut into chunks,
  • 3 cloves minced garlic,
  • 1 cup diced parsnip,
  • 3 cups water,
  • 1-1/4 cups low sodium beef broth,
  • 1 large can tomatoes,
  • 1 tsp. dried thyme
  • , 1 tsp. dried oregano,
  • Salt and pepper to taste,
  • 1 bay leaf.

* Remove all visible fat from beef; cut beef into 1 inch cubes. In large casserole or Dutch oven, toss beef with flour. Add broccoli onions, carrots, garlic, parsnip, water, beef broth, tomatoes, thyme, oregano, salt, pepper and bay leaf; stir to mix. Bake, covered, in 325 F oven for 2 1/2 to 3 hours, stirring occasionally. Remove bay leaf before serving.
