Ingredients
- 24 each Mushrooms
- 1 bag fresh spinach leaves, cleaned and stems discarded, steamed and drained well and chopped
- 2 oz. cream cheese softened
- 4 oz feta cheese
- 1 small can sliced water chestnuts drained
- 1 bunch green scallions

Step 1
Wash mushrooms and remove steams. Finely chop ( may use food processor) steams, scallions (including the white part) and the water chestnuts. Set aside. Put feta in small food processor, add cream cheese to blend. Mix all ingredients together.
Place mushrooms in shallow baking pan, fill each cap with cheese mixture. Sprinkle with 1 Cup dry Parmesan cheese and bake at 350 for 15-20 minutes.
* might try adding garlic or tsp of Beau Monde seasoning
