Eric's Salmon W/Aji Mirin

Ingredients
- 1/4 cup soy sauce
- 1/4 cupaji mirin
- 1 Tbs. corn starch
- 1 Tbs. sugar
- powdered ginger to float over top or grated ginger
- 2 garlic cloves, minced

Preparation
Step 1
Rinse salmon and pat dry.
Mix half and half aji mirin and soy sauce.
Mix 1 Tbs. corn starch in 1/4 cup cold water and set aside.
Using about 1/2 cup aji mirin add sugar, ginger and garlic. Bring to a boil and simmer until sugar is dissolved. Slowly pour in cornstarch mixtures and bring to a boil, simmer until looks like coffee and is syrupy, 10 to 20 minutes, stirring occasionally.
Baste salmon occasionally, grilling or baking.
