Ingredients
- 2 tbsp unsalted butter
- 2 tbsp flour
- 1 cup milk
- 2 oz extra old cheddar cheese, shredded
- 14 oz can artichoke hearts, drained and coarsely chopped
- Dash of hot sauce
- Tortilla chips or fresh vegetables, for dipping

Preparation
Step 1
Melt the butter in a medium saucepan over medium-low heat. Stir in the flour and cook for 3 minutes. Slowly pour in the milk, whisking constantly. Cook for 5 to 7 minutes, until thick, stirring occasionally. Stir in cheese and artichokes and season with hot sauce. Pour into a bowl and enjoy while still warm, scooping it up with the tortilla chips or fresh vegetables. Can also use Havarti, Edam or Gouda cheese.
