Easy Red Velvet Cake

- 2 cups flour
- 1 1/3 cup sugar
- 1 tsp. baking soda
- 1 cup buttermilk
- 1 cup oil
- 2 eggs, lightly beaten
- 1 bottle (1 oz.) red food coloring
- 1 tsp. vanilla

Preparation
Step 1
Preheat oven to 350 degrees. Grease and flour three 9”round cake pans. In large mixing bowl stir together flour, sugar and baking soda. Add buttermilk, oil, eggs, red food coloring and vanilla. Beat with electric mixer on low speed for 2 minutes. Divide batter evenly among prepared pans. Bake for 18-20 minutes. Cool layers in pans on wire racks for 10 minutes. Remove layers from pans. Cool completely on racks. Fill and frost cake with cream cheese frosting.
Cream Cheese Frosting:
In large mixing bowl, beat together 2 (8 oz.) pkg. softened cream cheese and ½ cup softened butter until smooth. Beat in 6-7 cups powdered sugar until smooth and spreadable. Stir in 1 ½ cups finely chopped nuts.
