Ingredients

  • 1-1/2 cups fresh strawberries chopped
  • 1/2 cup sugar
  • 1 package whipped topping mix
  • 1/2 cup cold milk
  • 1/2 teaspoon vanilla
  • 2 egg whites
  • 1 teaspoon lemon juice
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup margarine
  • 1/2 cup chopped pecans

Step 1

Stem, wash and chop berries. Mix in sugar and set aside. Whip together the topping mix, milk and vanilla for about 3 minutes and refrigerate.

Mix flour, brown sugar, then cut in 1/2 cup margarine with pastry blender. Stir in chopped pecans. Place mixture on cookie sheet and bake at 325 degrees for 15 minutes. Stir mixture a couple of times with fork while baking to keep crumbly. Allow to cool completely.

Mix strawberries and sugar from above, egg whites, lemon juice. Combine and beat with electric mixer for 20 minutes, scraping bowl occasionally. After mixture is beaten fold in whipped topping. Place 2/3 of crumb mixture in bottom of large rectangular cake pan or plastic container. Add strawberry mixture and garnish with remaining crumbs. Freeze until firm.
