Ingredients
- 1 T. plus 1 tsp. olive oil
- 2 garlic cloves, minced
- 6 oz. cubed, cooked lean ham
- 1/4 C. dry white wine
- fusilli cooked, drained
- 4 C. arugula leaves
- 1/2 C. part-skim ricotta
- 1 T. grated Parmesan

Step 1
1) in large nonstick skillet, heat oil; add garlic. cook stirring constantly 1-2 minutes, until tender. stir in ham and wine; cook 2-3 minutes, or until most of the liquid evaporates
2) add pasta, arugula, ricotta and parmesan cheese to skillet; cook, stirring to coat pasta, 1-2 minutes or until heated thru
