QUESADILLAS WITH GOUDA

Ingredients
- 4 large tortillas,
- 1 large red onion diced
- 2 slices bacon diced
- 1 sweet red pepper diced
- 2 cups (500mL) grated Gouda, Edam or Mozzarella cheese

Preparation
Step 1
Coat a large frying pan with non-sticky spray. Add diced onion, bacon and pepper and stir-fry onion is golden. Remove to a dish and reserve. Wipe out pan and re-spray. Lay 1 tortilla in the pan and spoon over it half the fried mixture. Sprinkle with half the cheese. Top with another tortilla.
Weigh it down with a heavy pot and cook over medium-high heat until cheese is melted. Turn and cook on other side about three minutes. Using a spatula remove to a cutting board and cut in quarters. Keep warm. Repeat with next two tortillas. Serve two wedges per person with a side salad or sliced cucumbers and tomatoes. Salsa, guacamole and sour cream are all good additions. .
