Ingredients

  • 1 Tbs canola oil

  • 1 cup chopped onion

  • 1 cup chopped green bell pepper

  • 1 medium zucchini, diced

  • 2 cloves garlic, minced

  • 3 cans diced tomatoes and green chiles

  • 1 can pinto beans, drained and rinsed

  • 1 can black beans, drained and rinsed

  • 1 can navy beans, drained and rinsed

  • 1 cup frozen corn

  • 1 tsp. ground cumin

  • 1/2 tsp. ground chili powder

Directions

Place all ingredients into crock pot; add low-sodium broth to desired consistency. Simmer for 3-5 hours – enjoy the aroma. Ladle into serving bowls. Top with dollop of sour cream and cilantro, or serve with crusty bread for dipping. 236 Calories; 4g Fat; 40g Carbohydrate; 9g Fiber
