Ingredients

  • Salad:
  • 1/2 head romaine lettuce, chopped
  • 1 head red-leaf lettuce, chopped
  • 12 strips of bacon, cooked and chopped
  • 4 hard-boiled eggs, chopped
  • 1 avocado, diced
  • 2 cups diced cooked chicken
  • 1/2 cup diced tomato
  • 1 cup sliced black olives
  • Blue-cheese dressing:
  • 1/2 cup extra-virgin olive oil
  • 3 tbsp. red wine vinegar
  • 1 tsp. Dijon mustard
  • 1/3 cup blue-cheese crumbles
  • 1 tsp. chopped shallots
  • salt and pepper, to taste

Preparation

Step 1

1. For the salad: Toss chopped lettuces together and divide evenly among 4 serving plates. Arrange remaining ingredients on the lettuce as desired.

2. For the dressing: Mix all listed ingredients in a blender and pulse until smooth, season to taste with slat and pepper.

3. Serve each salad with a side of dressing.
